Guava Syrup How-to
Wash & peel guava (set skins aside for salt rim). Put guava pulp in a saucepan with one cup sugar and two cups water. Cook on a simmer until seeds become loose and consistency is smooth. Remove from heat and strain out seeds with a fine strainer. Keep sealed and refrigerated.
Roasted Guava Salt
Lay skins of guava on a backing sheet lined with parchment paper and cook at 200 degrees for 2-4 hours. Take dried guava skins and crush in a mortar and pestle or in a coffee grinder or food processor. Gently mix with smoked sea salt.
To achieve a salt rim, line the rim of the glass with the juice of a citrus and roll in the salt.
